The quality of our food is the most important thing to us and therefore the meat and the buns (the 2 most vital ingredients) have to be top quality and we care about where they come from!

Our Meat –


Our Lamb is either the Scottish Black Face from Speyside reserve in Scotland or Salt Marsh straight out of the Essex marshes, both are free range.

 The Scottish Black Face: The outstanding qualities of the breed are survivability, adaptability and versatility, with the ability to fit into any farming situation. They are one of the hardiest sheep breeds in the country and are the backbone of the Scottish sheep industry.

Salt Marsh Lamb: As the name implies, salt marsh lambs graze on land regularly covered by the sea – at least twice yearly – where the pasture contains salt-tolerant plants (halophytes) such as samphire, sea purslane, and sparta grasses which contain minerals that influence the flavour. Because they roam and use their muscles, salt marsh lambs tend to be leaner and the meat looks darker and redder, a bit like game. And salt marsh lambs will never be anything but lean as Grazing isn’t as easy for lambs on a salt marsh. The grass is very short, so that’s why you don’t get over-fat lambs.


Our pork is also all free range from breeds such as Old Spot, Welsh, Gloucester and Hampshire but for us they predominantly serve Hampshire.

Allman is famous for his prize winning pig livestock and we have to admit the quality is one of a kind. Hampshire hogs are noted for being well-muscled and rapid growers, and for exhibiting good carcass quality when used as meat animals.


The Dexter beef Brisket is from Allman also, after being freshly slaughtered and delivered the next day the briskets are hung for a minimum of 21 days before being taken off the bone and trimmed to spec. The Dexter breed originated in the South West of Ireland. The smallest native breed of cattle in the British Isles, they are hardy, dual-purpose cattle, producing excellent beef and milk, an ideal suckler cow for conservation grazing.


Free range thigh Meat: The free range poultry supplied to us originates from Gloucestershire, with state of the art night housing and free roaming during daylight the quality of these chickens can’t be matched. The birds themselves are subject to the highest welfare standards, the birds can be moved to an outdoor seasonal facility during the winter to ensure natural and stable light without enduring the harsh conditions.


Our Buns –


Our delicious Brioche buns come from The Cavan Bakery in West London, they’re a family run Bakery that has been operating for more than 83 years and the business is now run by the third generation of the family.

The Cavan Bakery bakes traditional, crusty bread, cakes, and pastries. The excellence of their products has been proven by winning five Great Taste Awards, the “Oscars” of the Food Industry. Their team of dedicated craft bakers work through the night to ensure not only their shops are filled with delicious, fresh products every morning but so we can have some too!

We believe it is the combination of the finest and freshest quality ingredients; Cavan’s own simple, traditional recipes; an uncompromised baking process; and with over 83 years of baking tradition, passion and commitment that gives our Brioche Buns the perfection we hunted for!
